Life changing cookies (english recipe) SUPERFOODS
These cookies have really changed my life. I keep preparing them and always keep some in a box. I can take them out when in a hurry to eat in a bus or as a lunch at work. They’re easy to pack and easy to eat. Healthy, full of proteins, nutricious, easy. Great for travel, especially on plane, where it is quite important to have somethig easy to eat and energetic.
They do not contain flour or sugar, but above all they are really delicious, a bit like granola bars, a bit like oatmeal cookies with a taste of peanut butter and banana, with a twis of (depending on what you like) roasted unsalted peanuts, raisins, cranberries, hazelnuts. …
As if it was not enough of good, they’re super-easy to make – the only thing you need to do is mixing the ingredients in a bowl. What’s more, you can add what you want and how much you want (!).
I used:
for a BASE:
half a glass of: oatmeal (regular or quick), rice flakes (regular or quick), sesame seeds, disiccated coconut,
for the FIXINGS:
a handful of roasted unsalted peanuts and a handful of raisins or cranberries,
for the GOOD FAT:
half a cup of tahini or peanut butter (homemeade preferably)
for the SWEET tast:
half a cup of honey or natural maple syrup, recently I added Jordan’s skinny syrup and it was great too
and to BOND it:
1 hand smashed banana, 1 egg (if you added 1 glass of the above, 2 eggs if you added 2 glasses of the ingredients above)
The consistency shall be like a thick dough, possible to spoon on the tray, if it is too dry, add an extra egg or peanut butter/tahini.
Lay the baking paper on the tray, make tbsp rations. You can revise them with wet hands. Bake at 19o Celsius degrees for 12- 15 minutes.
