It’s not that difficult.
You need to break the eggs a night before, separate the whites and leave them outside the fridge for the night, covered (2 egg whites).
Use almond flour or grind the almond flakes into flour. Don’t use whole almonds or unblanched almonds. Flakes are the best. U need 60grammes.
Mix it with 100grammes of castor sugar.
Whisk the egg whites, when it starts to be foamy add 20grammes of regular sugar, little by little. Continue whisking until you get snow consistency (you can cut it with a knife).
Add almond and sugar mixture to the ‘snow’, little by little, mixing delicately with rubber spatula. You have to be patient here.
When you finish put the mixture into the confectioners sleeve (?) and cut a tiny bit of an ending. Place little portions on the oven tray with baking paper. Leave it for one hour, not less, room temperature, to rest. Bake for 12 minutes in 150 Celsius degrees. Another part bake for 10 minutes.
I make the filling of white chocolate. I put a bowl on a pot with boiling water, I place half a chocolate, when it’s melted I add 2 tbspns of sour cream.
